Vanilla Shortbread Easter Bunny Biscuits

Daily savings time started and we are just a month away from Easter. I spent my weekends trying out new Easter recipes, whether they’d be bakes or cocktails, and I am loving it! No Easter would be complete without the fame Easter bunny though so here is a super easy recipe for you. This Vanilla Shortbread Easter Bunny Biscuits Recipe will sure add a touch of cuteness to your afternoon tea!

Ingredients & equipment for the Easter bunny biscuits

Vanilla shortbreads Meringue kisses Caramel Equipment
  • 1 cup butter (room temperature)
  • 1 cup icing sugar
  • 2 1/4 cup flour
  • 2 tbsp vanilla extract
  • 2 egg whites
  • 1/4 tsp cream of tartar
  • Pinch of salt
  • 1/2 cup + 1 tbsp sugar
  • Food coloring
  • 1 cup sugar
  • Rolling pin
  • Bunny shaped cookie cutter
  • Stand mixer
  • Whisk attachment

Vanilla Shortbread Easter Bunny Biscuits Recipe

Meringue kisses

Note: You can purchase ready-made meringue kisses at the store if you wish to skip this step.

  1. Preheat the oven to 200°F. Line a baking sheet with parchment.

  2. In the bowl of a stand mixer, combine the egg whites, cream of tartar, and salt. Beat until peaks form. Gradually add the sugar and continue to beat until the mixture is stiff and glossy.

  3. Optional: Separate the meringue in 3 smaller bowls and add a different food coloring to each. Mix until combined.
  4. Pipe meringues onto the baking sheet, using a piping bag and star tip.

  5. Bake the meringues for 90 minutes.

  6. Turn the oven off with the meringues still inside and the door shut; leave them there until they’re completely cool, about 3 hours or more.

Vanilla Shortbread Easter Bunny Biscuits Recipe

  1. Pre-heat the oven to 325°F.
  2. In a stand mixer fitted with a paddle attachment, cream the butter and icing sugar on medium speed until light and fluffy. 
  3. Add the flour little by little until fully incorporated.
  4. Add the vanilla and mix to combine.
  5. Place the dough on a baking sheet and cover with another baking sheet. Roll out the dough to about 1/4 inch thick.
  6. Remove the top baking paper layer and cut out bunnies. Remove the surrounding dough.
  7. Bake in the oven for 15 minutes, then remove from the oven and let cool on a wire rack.

Caramelize sugar

  1. In a sauce pan, caramelize 1 cup sugar with 2 tbsp water on low heat.
  2. Cook, stirring constantly with a wooden spoon or silicone spatula, until sugar dissolves and mixture just begins to simmer.
  3. After sugar dissolves and syrup is simmering, cook for approximately 8 to 10 minutes, without stirring. 
  4.  Hold handle of pan and gently tilt the pan off the heat to distribute color evenly as sugar caramelizes. 
  5. When the sugar reaches a golden brown color, remove from the heat and use immediately.

Assemble the bunny biscuits

  1. Drop a bit of caramelized sugar on each bunny.
  2. Immediately add a meringue kiss on top.
  3. Let set for 15 minutes.
  4. Enjoy with some tea!
