Daily savings time started and we are just a month away from Easter. I spent my weekends trying out new Easter recipes, whether they’d be bakes or cocktails, and I am loving it! No Easter would be complete without the fame Easter bunny though so here is a super easy recipe for you. This Vanilla Shortbread Easter Bunny Biscuits Recipe will sure add a touch of cuteness to your afternoon tea!

Vanilla Shortbread Easter Bunny Biscuits Recipe
Meringue kisses
Note: You can purchase ready-made meringue kisses at the store if you wish to skip this step.

Preheat the oven to 200°F. Line a baking sheet with parchment.

In the bowl of a stand mixer, combine the egg whites, cream of tartar, and salt. Beat until peaks form. Gradually add the sugar and continue to beat until the mixture is stiff and glossy.
- Optional: Separate the meringue in 3 smaller bowls and add a different food coloring to each. Mix until combined.

Pipe meringues onto the baking sheet, using a piping bag and star tip.

Bake the meringues for 90 minutes.

Turn the oven off with the meringues still inside and the door shut; leave them there until they’re completely cool, about 3 hours or more.
Vanilla Shortbread Easter Bunny Biscuits Recipe
- Pre-heat the oven to 325°F.

In a stand mixer fitted with a paddle attachment, cream the butter and icing sugar on medium speed until light and fluffy.
- Add the flour little by little until fully incorporated.
- Add the vanilla and mix to combine.
- Place the dough on a baking sheet and cover with another baking sheet. Roll out the dough to about 1/4 inch thick.
- Remove the top baking paper layer and cut out bunnies. Remove the surrounding dough.
- Bake in the oven for 15 minutes, then remove from the oven and let cool on a wire rack.
Caramelize sugar
- In a sauce pan, caramelize 1 cup sugar with 2 tbsp water on low heat.
- Cook, stirring constantly with a wooden spoon or silicone spatula, until sugar dissolves and mixture just begins to simmer.
- After sugar dissolves and syrup is simmering, cook for approximately 8 to 10 minutes, without stirring.
- Hold handle of pan and gently tilt the pan off the heat to distribute color evenly as sugar caramelizes.
- When the sugar reaches a golden brown color, remove from the heat and use immediately.
Assemble the bunny biscuits
- Drop a bit of caramelized sugar on each bunny.
- Immediately add a meringue kiss on top.
- Let set for 15 minutes.
- Enjoy with some tea!
