Daisy Lemon Curd Sandwich Cookies

In your opinion, what is the perfect spring treat? I have to say, in my opinion, anything floral or Easter related is it. Just because with so many delicious baked goods, it is always so difficult to pick one over all the others. But I have to say, those daisy sandwich lemon cookies are not only the cutest but the most delicious too!

Ingredients for the lemon cookies

Lemon cookies Lemon buttercream Equipment
  • 2 sticks butter, softened
  • 1/2 cup sugar
  • Zest of 2 lemons
  • 2 eggs, room temperature
  • 3 1/é cups flour
  • pinch of salt
  • Lemon curd
  • Icing sugar
  • 6 tbsp + 1 tsp (3 oz) butter, softened
  • 3/4 cups icing sugar
  • 1 tbsp lemon juice
  • 1 tbsp milk
  • Stand mixer
  • Paddle attachment
  • Piping bag
  • Piping nozzle
  • Baking trays

Daisy lemon cookies recipe

Make the lemon cookies

  1. In the bowl of a stand mixer, cream together butter, sugar and lemon zest.
  2. Add the eggs, one at a time and mix until combined.
  3. Add the salt and flour to the wet ingredients little by little.
  4. Mix until fully combined and shape the cookie dough into a ball.
  5. Wrap in cling film and refrigerate for at least 30 minutes.
  6. Pre-heat the oven to 355ºF (or 180ºC).
  7. Line a baking sheet with baking paper.
  8. Roll out the cookie dough until it’s about 3 mm thick.
  9. Using a flower-shaped cookie cutter, cut out flowers and place them on the baking sheet.
  10. Cut out circles from the middle of half of the cookies using a piping nozzle.
  11. Bake the cookies in the oven for 15 minutes.
  12. Allow to cool completely.

Make the lemon buttercream

  1. In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and the powdered sugar.
  2. Whisk until pale and fluffy.
  3. Add the lemon juice and milk. Whisk until fully combined and pale and fluffy.
  4. Put the lemon buttercream in a piping bag fitted with any nozzle.

Assemble the daisy sandwich lemon cookies

  1. Pipe a ring of buttercream around the edge of each cookie without a whole.
  2. Pipe lemon curd into the buttercream ring.
  3. The lemon curd should completely fill the buttercream ring.
  4. Sprinkle icing sugar atop each daisy cookie with a whole.
  5. Place a flower cookies with a whole on top of each cookie with the buttercream and lemon curd.
  6. Press down slightly so that the lemon curd fills up the hole in the cookie slightly.
  7. Pipe more lemon curd into each cookie if necessary.
  8. Enjoy!
