Chocolate Easter Nest Pavlovas

As we get closer to Easter, we are getting towards the end of all my Easter recipes. I have loved baking all those holiday treats this year, and they wear all equally delicious. There has been some ups and downs with some failures, but a lot of learnings and fun otherwise. These cute Easter nest pavlovas are super simple to make and so delicious!

Ingredients and equipment for the Easter nests

For the meringue For the filling
  • 3.5 oz Dark chocolate finely grated
  • 2 tbsp Cocoa powder
  • 6 egg whites
  • 1 tsp Cream of tartar
  • 2 cups Caster sugar
  • 1 tsp Vanilla extract
  • 1 1/4 cup heavy cream
  • Mini Eggs
  • 1 tbsp icing sugar
  • 2 tbsp Dark chocolate curls
  • 1 tsp Vanilla extract

Easter Nest Pavlova Recipe

  1. Pre-heat your oven to 100°C (225°F).
  2. Line a baking tray with baking paper.
  3. Grate the dark chocolate and add to a bowl.
  4. Stir the cocoa powder into it the dark chocolate.
  5. Whisk the egg whites and cream of tartar in the bowl of a food mixer until stiff peaks form.
  6. Add caster sugar a spoonful at a time while whisking.
  7. Once the sugar is fully combined in the meringue, add the vanilla extract.
  8. After stiff peaks form and the meringue is glossy, turn the mixer off.
  9. Fold the chocolate and cocoa powder mix into the meringue gently
  10. Put the meringue into a piping bag with a star tip and pipe out nest shapes onto the baking tray.
  11. You can start by piping the base (a circle) and then the ring.
  12. Bake the meringue nests for 1 hour and 30 minutes.
  13. Leave the meringue in the oven while it cools. Do not open the oven door or the meringue may crack.
  14. Whisk the double cream with the icing sugar and vanilla.
  15. Spoon the cream into the middle of each nest.
  16. Add Mini Eggs in each nest and some dark chocolate shavings.
  17. Enjoy!
